KNUCKLE OF PORK on the grill or HOGGET on the grill

Recipe Ingredients
6 portions of hogget or
6 portions of knuckle of pork
1 cup of olive oil
1 dry onion
1 chopped tomato
100 g. of tomato juice
1 tablespoon of lemon juice
1 teaspoon of juniper
6 seeds of juniper
salt
½ teaspoon of black pepper
½ teaspoon of oregano
1 teaspoon of sweet red pepper flakes
3 laurel leaves
Execution of the recipe
We chop the onion and the tomato in a utensil; we throw the remaining materials (oil – lemon– juniper – salt – pepper – oregano – red pepper flakes), we stir them and we pass all the pieces of meat from this mixture.
We place them on the grill and we throw the remaining mixture above it. We add a glass of water and we bake it in a preheated oven in 250 degrees for 2½ hours.
